This post discusses how we used the prepared financial statement and journal data to perform exploratory analysis on the sales information.
Exploratory Analysis
Immediately after preparing the financial statement and re-organized the transaction-level data by stacking all daily transactions into one long file, we began to explore the sales trend and breakdowns.

Note: First few months of sales information were removed from the trend due to volatility.

Takeaways
From these exploratory analyses, we learned that specific products were seeing much stronger growth voer the last few months. This takeaway is later accounted in adjusting the menu pricing and profit margins.
Next post will discuss how these data were further broken down into daily, weekly and hourly levels for deep dive analyses, and also be analyzed together with weather/temperature data.
